CHICKEN & APPLES
Tender chicken thighs, sweet apples, and warm autumn spices come together in a comforting skillet meal that celebrates the flavors of the season. Simple enough for a weeknight, yet cozy enough for a special family dinner.
INGREDIENTS
- 1 lb boneless, skinless chicken thighs
- 2 tablespoons butter
- 1 tablespoon light or dark brown sugar
- 2 cups apple slices
- 1/3 cup chopped onion
- 1/3 cup apple cider
- (optional) fresh thyme and rosemary, for garnish
SEASONINGS
- salt
- pepper
- ground coriander
- ground cinnamon
- ground nutmeg
- thyme

INSTRUCTIONS
SEASON THE CHICKEN
Season both sides of the chicken thighs generously with the salt, pepper, ground coriander, ground cinnamon, ground nutmeg, and thyme.
BROWN THE CHICKEN
In a large skillet, melt the butter over medium heat.
Add the seasoned chicken thighs and cook until they are golden brown on both sides. Remove the chicken from the skillet and set aside.
COOK THE APPLES & ONIONS
Add the chopped onion and apple slices to the same skillet.
Sprinkle with the brown sugar and cook until the onions become tender and the apples begin to soften.
Pour in the apple cider and stir to combine, allowing it to gently simmer for a few minutes.
FINISH
Return the chicken to the skillet, nestling it into the apples and onions.
Cover and continue cooking until the chicken is fully cooked through and the flavors have come together.
If desired, garnish with fresh thyme and rosemary before serving.
